First Course:

Shrimp Bisque – with creme fraiche

New Year Salad – Lee’s Greens shaved butternut squash, organic poached beets, watermelon radish and micro greens

Second Course:

Pierogies – Kennebec potatoes, Milton Creamery white cheddar and caramelized onions

Quark Cheese Flan & Pork Belly – local quark cheese, savory custard and confit pork belly

Main Course:

Grass-Fed Beef – Ebersol Cattle Co. braised sirloin, local green bell pepper risotto and au jus

Halibut – Wild Alaskan halibut, beet polenta and greens

Vegetarian – rice & lentils crepes, spiced summer squash & potatoes, sauteed greens and butter sauce (can be vegan)
